My new favorite vegetable quick fix:
Cut 3-4 ripe tomato's into smaller pieces and toss into a blender. Add 1/4-1/2 cup of water (add more water if they are not mixing well enough). Throw in 3-4 fresh basil leaves, a bunch of fresh or dried mint leaves, and fresh ground salt and pepper to taste. Makes 2-3 servings. Drink cold, and refrigerate remaining juice for up to 2 days.
