Say hello to...Glutino Chocolate Vanilla Creme Cookies.

I've been a bit overly zealous on trying new gluten-free products since arriving in Vancouver. I feel obligated to share all these sweet treats if you haven't already heard of or tried them. Although not always the healthiest, nor homemade, they do make for an easy sweet treat. I recently bragged about how great KinniToo's Vanilla Creme Cookies were, well, these cookies are the chocolate comparison. Keep an eye out for Glutino Gluten-free Chocolate Vanilla Creme Cookies, also available at local health food stores or Glutenfree.com. Sweet as they are, they are worth the bite...or two :P

Say hello to...gluten-free Christmas cookies!

My family has a long list of Christmas baking traditions, however I haven't yet experimented to turn them gf (since ingredients can be hard to find in Korea). I will be home for Christmas this year so my father has decided to make gluten-free Christmas cake. I hope to do my own Christmas baking too :P I stumbled upon Glutenfreeda which lists several kinds of gf Christmas cookies. What would Christmas be without some yummy cookies?!

I try to post my own recipes on Friday's, but have been too busy to try new ones! So...I have scouted out some recipes that I plan to try in the new future ;) These two photos are taken from my absolute favorite website, Elana's Pantry. Not only are Elana's photo's almost always mouth-watering, but the recipes themselves aren't too difficult to make. Cranberry Walnut Chocolate Chip Cookies and Gluten Free Granola are waiting for you to try them out ;)

Say hello to...ranger cookies.

My sister adapted this recipe from an old cookbook she had laying around. She surprised me with these cookies the last time that I went to visit her. Although they can be a tad crumbly, they have such a unique taste from other typical cookies.

Ingredients:

1 cup margarine

1 cup sugar

1 cup brown sugar

2 eggs

2 tsp gf vanilla extract

1/2 tsp gf baking powder

1 tsp gf baking soda

1 tsp salt

2 cups gf flour

2 cups gf rice krispy cereal

2 cups gf oats

1 cup coconut

1 cup raisins

1. Pre-heat oven at 350 F.

2. Cream together first 5 ingredients. Mix and add the remaining ingredients.

3. Form mixture into 1" balls and place on cookie sheet. Cook 12-15 minutes.

For a tasty dessert, serve cookies fresh out of the oven with a scoop of gf vanilla ice cream/ soy ice cream :)

*If you don't have access to gluten-free oats, the recipe should still stay together without them.

Say hello to...D'Lush chocolate biscuits.

When I went to Australia in January I was overwhelmed by the amount and variety of gluten-free options. There were so many fresh baked goods that I could purchase, or packaged goods in local grocery stores. On my last day in Australia I discovered D'Lush chocolate biscuits, a heavenly treat :) Last week I received a surprise gluten-free package in the mail from my Australian friends and they had included these precious cookies- not knowing how much I liked them ;) As far as I know they can only be purchased in Australia. Say hello to...snickerdoodle cookies.

I can't say I've ever enjoyed soft gluten-free cookies out of a box...that is until my friend introduced me to 'Enjoy Life' snickerdoodle cookies. I had a hard time believing her when she said these cookies were amazing, but...they REALLY are! If you're living in Canada you can buy them at London Drugs. I actually remember seeing them when I was in Canada last year, but simply passed them thinking they probably weren't really THAT soft. You can also purchase them online at the Gluten Free Mall. Try them for yourself, you'll be surprised!
